Today I had the breakfast of champions right here; a flakey brownie and toasty hot chocolate.
Okay so I might be taking this whole "getting better and now I'm able to eat what I want finally" thing a little too far, but when a girl has a craving for chocolate, it becomes a priority.
I've been on a baking rampage this weekend, making cakes for birthdays, sweets for Dan and I's mini Thanksgiving, and prepping pies and blondies for our big road trip Thursday morning (photos to come), so I decided to indulge a little and whip these babies up.
But they're the bomb; the crust is flakey and crumbley, but the center is soft and chewy; in my opinion, what a classic brownie should be like. I've made some fun ones, like these fudge ones, and these cake ones, but I think these really hit the nail on the head when it comes to the perfect sweet snack. Especially this time of year.
But for the rest of the day I'll be finishing up throwing things in the oven and simultaneously packing and cleaning for our 2 day mini trip to Dayton to see our families and suit up for our Black Friday shopping excursions.
I'm soooo thankful for having the time to spend with our friends and family this time of year, our good health, and a multitude of other things. This year has been a roller coasting full of twists and turns, but I wouldn't change any of them for the world. I've learned so much about myself, Dan and I's relationship has grown so strong, and we've been fortunate enough to be surrounded by such amazing friends here in our new home. To think that we're approaching our 1 year Columbus anniversary is crazy to me, but I'm so happy at the same time and am always looking to the future.

Chocolate Chip Peanut Butter Swirl Brownies
Makes 9-16 brownies
3/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
3/4 granulated sugar
3/4 cup olive oil
1 teaspoon vanilla extract
1/4 cup warm water
1 cup chocolate chips, melted (using 1 tablespoon butter to smoothen)
1 cup assorted chocolate chips
1/4 cup smooth peanut butter
Preheat oven to 325 degrees
Prepare 8x8 inch brownie pan by spraying with cooking spray or rubbing down with oil
1. Sift all of the dry ingredients together in a large bowl. Set aside.
2. Whisk all of the wet ingredients together in a separate bowl (including the melted chocolate). Slowly add the dry ingredients to the wet ingredients, whisking to fully mix.
3. Fold in the assorted chocolate chips and pour the batter into your 8x8 inch pan.
4. Heat up the peanut butter in a small saucepan over low-medium heat until it's easy to drizzle. Dollop spoonfuls of peanut butter into the brownie pan and using a toothpick, swirl the peanut butter into the chocolate. Set in oven and bake for 40 minutes. Cool for 30 minutes before serving.
