Of course you could say that my business is definitely something I do for me. You're wouldn't be wrong. I love my little side hustle, but it's become apparent that owning a small business, planning a wedding, running a dance party with my friends, all on top of working at my 9-5 don't allow for much else in between.
Baking can be extremely meditative. But I've only realized that recently. Measuring out ingredients, mixing things, prepping pans; all require you to be in the moment. If you're not, then the recipe you're working on could end up a disaster. Baking is how I keep a balance; it helps me stay present. It's a lot more like meditating than you would think.
And through even these first few short weeks, I've been finding that giving myself time to do something I enjoy, is radiating into other aspects of my life as well. If you keep yourself happy, then it only makes everything around you better.
These INSANE rainbow squares of sugary marshmallowy goodness.
Layered with rice krispy cereal, sprinkles, fruity pebbles, and funfetti cake mix, they're honestly one of the easiest and tastiest things I've ever made. They're great eaten alone, or as "buns" for an ice cream sandwich. (BEST idea ever you guys). The best part about this recipe is that the batter is so simple to mold into different shapes - I spread it out on cookie sheets so i could slice squares for ice cream sandwiches and also made an ice cream cake pressing the batter into spring form pans.

Makes roughly 2 dozen slices
Requires 1 or 2 sheet pans & 2 pieces of parchment paper
5 cups rice krispy cereal
5 cups fruity pebble cereal
2 packs of mini marshmallows
1 stick of unsalted butter
1/4 cup funfetti cake mix
1/2 rainbow/assorted sprinkles
**Extra sprinkles for the top
Line cookie sheet with parchment paper
1. In a large mixing bowl, add the rice krispy cereal and half of the sprinkles. Set aside.
2. In a medium sized saucepan, melt half of the stick of butter. once melted and starting to sputter, add one of the bags of mini marshmallows. With a spatula, fold the butter into the marshmallows until they start to melt into a big blob. Continue to fold for a few more minutes until the marshmallow mixture is more malleable. Pour this into the bowl with your rice krispy cereal and fold the marshmallows into it. Once it's evenly distributed and all of the cereal is covered, pour out onto your baking sheets, spreading it out evenly. Set in the fridge to cool while you prep the next layer.
3. For the fruity pebbles layer, follow the steps above, but add in the cake mix to the cereal prior to folding in the melted marshmallow mixture.
4. Once this layer is all mixed, remove the pan(s) from the fridge, add this layer to it, the extra sprinkles if desired, and chill for a half hour, or until cool, remove from the pans and slice into squares and serve.
**You also don't have to create layers with the 2 cereals - feel free to mix them for a large funfetti treat!
