I haven't been able to announce it until now, but I'm SO happy to say that I've accepted a new job (name to come later), where I'll be working as a men's assistant apparel designer!!!! *Cue screams and dancing and flailing*
I got the call last week with the job offer, and I don't think it's really hit me until now. I think I was pretty much in disbelief until I put in my 2 week resignation. And as much as I'll miss my coworkers at my current job, I know I'm moving in the right direction towards the career I'm striving for.
That being said, this new job is not right around the corner from my apartment. I can't take the bus there anymore or borrow Dan's car, So...drum roll puleaseeee...I JUST BOUGHT MY FIRST CAR. *Cue more screaming and flailing*
This is a HUGE moment for me. I'm still dancing around in confetti and streamers.
I'm almost 24 years old and have never had a car before this week.
No more waiting at the bus stop in the pouring rain. Or shivering in the snow. Or waiting to be rescued from work at the end of the day. Ah pure bliss.
With heavy waterworks, and some pictures that felt like first day of school, I signed the papers, and Sprinkles became my new baby.
So I thought that for this post I would share some fun road trip snacks, because there's nothing worse than being hangry and on the road. Especially when you're driving back and forth between 2 cities like Dan and I have been doing the past 2 weekends.
One of my all time favorite traveling snacks growing up was puppy chow. Call it what you will, but a giant gallon-sized bag of chex smothered in melted chocolate and powdered sugar was my all time fav.
So what better way to liven it up than with cake batter and sprinkles? A serious celebration snack! It's an update to a classic snack that I'm sure you'll love. The cake batter gives the powdered texture, and the sprinkles give that extra addictive crunch!
Happy snacking friends!
Cake Batter Puppy Chow
Makes 3 cups
3 cups Rice Chex mix
8 oz. bar white baker's chocolate (white chocolate chips won't melt down well enough)
1 cup white cake or funfetti cake mix
1/3 cup powdered sugar
1 cup rainbow sprinkles
1. Melt down the white chocolate in a small saucepan on medium heat until it becomes smooth.
2. Pour the Rice Chex into a large bowl. Pour the melted chocolate over top of the Chex and stir it until all of the cereal is covered.
3. Whisk together the powdered sugar and cake batter mix in a separate bowl. Slowly add, stirring the mixture a little at a time until the Chex is mostly covered, then add the sprinkles and finish stirring. Enjoy!
