Dan and I were invited to our friend's house warming party/potluck this last weekend, so naturally the first thing I did was poke around for some inspiration and break out the mixer. You give me a reason to bake and I'll come to your party with at least 2 different treats for you to taste test, (and for me to make sure they're worthy to share). Nothing wrong with going a little overboard so you're filled with desserts though right?
There's not much better than chocolate and beer, and I'm up for trying all sorts of treats, so why not something insanely chocolatey? Or how about a cookie within a cookie? Inception stuff right there guys. But really though, sandwich cookies crumbled within chocolate chip cookies...
These little morsels get so ridiculously soft as the dough bakes around the cookie chunks. They have a great gooey texture that works with the softened cookies and cream. And they're especially heavenly right out of the oven.
I mean, why would someone pass up a dessert with all sorts of fun chocolate bits inside??

Cookies & Cream Chocolate Chip Cookies
Makes 20-24 cookies
3/4 cup softened butter
3/4 cup light brown sugar
3/4 cup granulated sugar
1 teaspoon vanilla
2 1/2-3 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
10-15 crushed sandwich cookies (or smashed with a food processor)
1 cup chocolate chips
Preheat oven to 350 degrees
Line cookie sheet with piece of wax paper and set aside
1. Cream together the butter and sugars in a large mixing bowl in your stand mixer, or using your handheld on a medium speed until light and fluffy. Add eggs and vanilla until just combined.
2. Sift together the dry ingredients (start with 2 1/2 cups of flour, and set aside the other half), and slowly add them to the wet mixture until thickened and the dough is formed. It shouldn't stick to your fingers when you grab a little piece and roll it into a ball. If it does sticks, add more flour.
3. Using a spatula, fold in the crushed sandwich cookies and chocolate chips. Roll each into a tall cylinder, (check out what I'm talking about here), and place 10-12 on your baking sheet. Bake in the oven for 8-9 minutes and let cool for 10-15 minutes before serving.
