Well I've fallen victim to sinus issues this past week, (cue pathetic crying), but not much is worse than feeling weak and groggy all day at work and forcing yourself to stare at a computer screen. Especially when you know your body just wants rest.
But nevertheless, no sickness will stop me from sharing recipes with you guys! I've managed to peel myself out of bed to whip up these bad boys because there's nothing I want more when I feel awful than chocolate.
Especially if you're feeling like a giant lump.

Fudgy Walnut Dark Chocolate Brownies
2 sticks unsalted butter
2 1/4 cups granulated sugar
1 1/4 cups cocoa powder
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1 cup dark chocolate chips
Salt for sprinkling on top
2 cups of roughly chopped walnuts
Preheat oven to 350 degrees
Grease/line a 9x13" casserole dish or brownie pan
1. In a small saucepan, melt the sticks of butter on medium heat. Once melted, remove from heat and whisk with sugar in a large bowl, or in your electric stand mixer on a medium speed.
2. Sift in the cocoa powder, add the vanilla, and the eggs as well, one at a time until well blended.
3. Sift in the flour a portion at a time until fully combined, then fold in the chocolate chips. Pour in the pan and smooth out.
4. Sprinkle the chopped walnuts overtop of the brownie batter and press down gently so everything is touching the batter. Then sprinkle the salt and do the same. Put in the oven and bake for 30 minutes. When you take them out you'll notice that they're only half baked. Let them cool to just about room temperature, and chill them in the fridge for 30 minutes, then put them in the freezer for another hour or until they've solidified.
**This process sounds silly, but insanely worth it to have gooey and moist brownies. If you don't want to worry about cooling them and all this other jazz, just continue to bake them (usually around 40-60 minutes depending on your oven), until a knife can be cleanly removed and cool them for at least 30 minutes before serving.
